Ingredients for Alphabet Soup

PASTA: Alphabet noodles are what make this soup so fun! Find alphabet pasta with the other pastas in the supermarket or online here. If you can’t find them, use other mini pasta or even orzo.

VEGGIES: Sautéed carrots, onion, & celery are added to broth along with a can of tomatoes and potatoes. For a shortcut, you can use frozen vceggies.

SEASONINGS: Garlic, Italian seasoning, salt, & pepper are mixed with the veggies, broth, & pasta for the perfect flavor combination!

Variations

This soup is perfect for adding extra meat or veggies or mini meatballs. Add a bag of frozen vegetable medley, & some parmesan cheese.

How to Make Alphabet Soup

  1. Sauté vegetables with garlic until soft & fragrant.
  2. Add broth, tomatoes, potato, & seasonings.
  3. Simmer with alphabet pasta tender.

Leftovers

For best results, Alphabet Soup will keep in the refrigerator for about 4 days. Simply reheat on the stovetop. Freeze soup after it’s been cooled in zippered bags with the date labeled on the outside. It will freeze for up to 4 weeks.

  • In a large pot over medium heat, saute carrots, celery, onion, and garlic until onion begins to soften.

  • Add broth, water, tomatoes, tomato paste, potato, and seasonings. Bring to a boil and turn down to a simmer for 15 minutes.

  • Add alphabet noodles and cook for 7-8 minutes or until noodles are cooked al dente.

Fresh vegetables can be substituted for frozen veggies.
Cooked ground beef, shredded chicken, or mini meatballs can be added.
